Everything is editable - URLs, templates, markup, robots directives - so nothing stops a store from being excellent, and nothing stops a plugin from silently undoing it. Yes - it's arguably the most SEO-capable ecommerce platform, because it inherits WordPress's flexibility: full control over URLs, templates, schema and content. The flip side is that nothing is enforced, so a poorly configured store can be worse than a locked-down one. Good WooCommerce SEO is mostly about using that control deliberately.

Do I need Yoast or Rank Math for WooCommerce SEO?

One of them, yes - they handle titles, meta, sitemaps and basic schema. But the plugin is a tool, not a strategy.
